Kim Dickens Cider with White Peach puree – 5.5% ABV
Paired with a seared scallop with strawberry salsa and a frisee salad
Shelta Cavern Spirits Barrel Aged Gin – 80 proof
Paired with pastrami cured smoked salmon w/ gribiche and blue cheese crumbles
Black Currant Melomel (Mead) – 15.4% ABV
Paired with beef carpaccio w/ truffle oil, creme fraiche, frisee
Sour Belgian Stout fermented with a blend of Brettanomyces and Saccharomyces yeasts along with Lactobacillus and Pediococcus– 6% ABV
Paired with lamb stew over a rosemary griddle cake with humble heart goat cheese
Kettle soured wheat ale brewed with Chinese orange, ginger, lime peel, and yuzu – 4.2% ABV
Paired with a bahn mi style flank steak lettuce wrap, served with a chili vinaigrette
