ATS Culinary Conclave @ Straight to Ale

Anti Temperance Society Members are welcome to join us for a Culinary Conclave on October 4th in the Speakeasy. Ale’s Kitchen will be working to prepare five courses of small bites perfectly paired with 4oz samples of new Straight to Ale brews. Don’t miss out! Doors will open at 4pm and the first course will be served at 5pm. This is an ATS members only event – Sign up for ATS membership to enjoy.

Please wear your mask when not seated at your table. Due to capacity restrictions, you may be seated with other ATS members outside of your party. If you have a preference of who you’d like to sit with, please send your request to kimberly@straighttoale.com after you RSVP.

Appetizer: Rucola Caprese
Heirloom tomato tartar with balsamic reduction, agar agar arugula spaghetti, buffalo mozzarella toasted pine nuts and arugula micro-greens
Paired with: White Stout

Soup: Deconstructed French Onion
Savory onion marmalade, Gruyere and Mascarpone cream with rosemary olive oil, sphere mushroom stock, and toasted baguette crostini
Paired with: Belgian Style Saison

Salad: Stacked Waldorf Salad
Thin sliced red apples with celery leaves, goat cheese, toasted walnuts, and tart green apple gelee with creamy celery seed cider vinaigrette
Paired with: German style Smoked Helles

Entree: Dueling Proteins
Oven roasted soy medallions vs. roasted pork tenderloin with orange saffron sauce, rosemary parsnip puree, and char-grilled broccolini
Paired with: German style Doppelbock

Desert: Blueberry Tiramisu
Savoiardi soaked in white chocolate liqueur, layered in white stout spiced Mascarpone, with blueberry compote and white chocolate curls
Paired with: German style Farmhouse Ale
